Did you know it takes 40 gallons of sap to make 1 gallon of maple syrup? There are many theories and legends as to how indigenous people first discovered tapping maple trees. One includes Chief Woksis an Iroquois chief throwing his tomahawk into a maple tree in late winter or early spring. When the weather turned warm and sunny and he removed the hatchet, sap began to flow from the cut in the tree. He collected the sap. A woman in the tribe placed meat in the sap and boiled it for dinner. As the water in the sap boiled away, a sweet maple taste was left on the meat.
